Lifestyle Saturdays: Chicken Stew From Gamu’s Food Book

When we were kids, chicken was a big deal. Back then if you asked any kid what their favorite meal was, you would be told “rice and chicken.” Can I get an Amen? Haha! I have so many memories about this meal and I am sure it’s still one of the most popular meals in Zimbabwe.

Today on lifestyle Saturdays we have Gamu who is also a fellow blogger sharing with us her chicken stew recipe.

Ingredients

Chicken (bony pieces,if you use chicken breast it might be overcooked)

Tomato paste ( about 100g) 4tblspns

1 full onion

Carrots

1 Clove Garlic

2tblspns bbq sauce

1tblsp soy sauce

1 tblspn ketchup

A tspn ginger powder

Vinegar for marinating

Salt and pepper

Curry Powder

1tspn chilli paprika

1 tspn sweet paprika

Coconut oil

Brown Rice , white rice or potatoes Roasted or mashed

Method:

1.Wash chicken and put in a bowl to marinate it). Vinegar,garlic,ginger,paprika,saltnpepper,ketchup,bbq sauce ) .Leave in the fridge for an hour or more. Can be done overnight for best results.

2.Heat oil in a saucepan and fry chicken until its brown ,make sure to coat it thoroghly with marinate before frying .

3.Drain excess fat (mine was fatty which is not good)make sure there is just enough oil not too much .

4.After frying ,add some chopped onions anf the tomatoe paste ,fry a bit then add water for the mean to be thoroughly cooled.

5.At this point add the carrots ,and any veggies of your choice. Simmer for about 20 mins until meat is cooked .Add the curry powder and soy sauce and cook for a few mins more until sauce is thick.

You can serve this with rice,bread,potatoes.
